Pot Roast

Homemade slow cooked pot roast that is incredibly tender with a rich beefy gravy and chopped celery, carrots and potatoes. This takes up to 5 hours in the oven at 150C and tastes incredibly delicious.

Sauteed cabbage

This simple sautéed cabbage is full of flavour and so easy to make yet delicious and good for you too! Simply blanch the chopped cabbage in boiling water then sauté it with onion in butter and rosemary until softened and caramelised, this works well as a side dish that's very easy to make and adds heaps of flavour to any dish.

Homemade chocolate sauce is by far much better than store brought chocolate sauce, it's so quick and easy to make, with just a few ingredients and has a deep and luxurious flavour. This recipe is rich and fudgy and perfect for drizzling over ice cream, pancakes, waffles, brownies, or any dessert that needs a little extra indulgence. 

French Crêpes

Rich & indulgent French crepes! This recipe is my favourite to make and one I find myself craving regularly, with just a few basic ingredients – flour, eggs, milk, butter, sugar ,a pinch of salt and a splash of Cognac or Rum to add a little kick.

Making crepes from scratch is simpler than you might think, once you've mastered the basic technique, you can experiment with endless fillings and toppings. I tend to add sugar with loads of lemon drizzled on top or spread with rich chocolate sauce or jam and cream and  loads of berries.

Crispy chicken thighs with butter beans & spinach

One of my favourite winter recipes to cook up when the days start to get a little colder and darker is this cosy and delicious crispy chicken thighs, butter beans and spinach recipe. This dish is just so  satisfying and cooked in a cast iron pan alongside sage leaves, 1/2 a cup of white wine,  shallots and two large garlic cloves to add heaps of flavour. 

Potatoes Dauphinoise

This classic French Potatoes Dauphonise recipe  is in my opinion truly the creme de la creme of potato dishes! Highly indulgent with layers and layers of paper thin potatoe slices baked in cream, milk, loads of grated Guyere cheese and with hint of onion and garlic. A precious recipe like this is sure to impress and bound to be a staple in your kitchen.

Cinnamon Rolls

These cinnamon rolls are a  delicious soft and fluffy taste of haven with a rich caramel like sauce combination of  butter,  dark brown sugar and cinnamon filling and topped with a heavenly butter and cream cheese frosting. These rolls are easy  enough to make and bake in the oven in just 25 minutes. ! 

Irish Stew

Irish Stew might just be one of my favourite slow cooked comfort dishes. There is only one way to make Irish Stew and that's with lamb so please don't heed anyone who calls a beef stew Irish Stew. I'd recommend lamb shoulder being the best choice, it's really not to difficult to debone and cut as long as you have a sharp enough kniefe handy.  The lamb  cooks itself two whole hours in the oven until tender and juicy and falling apart.

You can really add in any vegetables you like, I sometimes add in cabbage or celery but make sure not to forget the Roux which is an easy and delicious thickener and elevates this dish entirely, simply combine butter and flour on the stove and whisk together continuously until the colour develops and transforms from a golden brown to a deeper rusty texture. I'm confident once you make this recipe it will become a steady staple in your kitchen. 

Greek yoghurt & strawberry cake

A delicious yet not overly sweet Greek yoghurt and strawberry cake flavoured with lemon juice & zest, two whole teaspoons of vanilla extract then topped with lots of fresh strawberries, flaked almonds and dusted with powdered sugar. I find the strawberries taste even more crunchy and sweet when marinated in some of the sugar and lemon juice so don't skip this step. This cake is the perfect spring and summer treat that is very easy to put together and a great way to use up some fresh strawberries.
