It's not Christmas without these flavourful gingerbread cookies and Royal icing. Full of deep flavours with a generous amount of ground cinnamon and ginger  spices and sweetened with dark brown sugar and molasses, this is the perfect combination of spices and sweetness and the best Christmas cookie recipe.

Chocolate sauce

Homemade chocolate sauce is by far much better than store brought chocolate sauce, it's so quick and easy to make, with just a few ingredients and has a deep and luxurious flavour. This recipe is rich and fudgy and perfect for drizzling over ice cream, pancakes, waffles, brownies, or any dessert that needs a little extra indulgence. 

Cinnamon Rolls

These cinnamon rolls are a  delicious soft and fluffy taste of haven with a rich caramel like sauce combination of  butter, maple syrup, dark brown sugar and cinnamon filling and topped with a heavenly butter and cream cheese frosting. These rolls are easy  enough to make and bake in the oven in just 25 minutes. Make sure to pour the heavy cream between the rolls to ensure a extra gooy roll and don't forget the maple syrup to the filling as it is the secret ingredient in this recipe! 

Rum & raisin ice creamThis old fashioned rum and raisin ice cream does take a while to make but is certainly worth the effort. The raisins are best left overnight in a third a cup of dark rum to plump up fully and absorb all the rum. You can use any kind of rum your have handy, I have made this recipe both with dark rum and golden rum and the results are both great. If you really like raisin and rum you can ajdust the recipe to 1/2 a cup of raisins and 1/2 a cup rum, I prefer just a third a cup as it becomes a bit too raisiny for me.

Chocolate chip cookiesIncredibly easy chocolate chip cookie recipe that is amazingly chewy, a bit fluffy, perfectly buttery and sweet and of course very chocolaty. Make sure your butter is softened to room temperature , an easy trick if your butter is too cold is to microwave the butter for 40-60 seconds on defrost mode to soften. These cookies taste best cooled down yet still slightly warm.
