Honey CheesecakeA healthier and lighter version of the New-York style Cheesecake. Instead of cream I've added greek yoghurt and some honey in place of sugar. It tastes just as good as the original you won't be able to tell the difference!
Kale Salad with Tahini DressingNot only is this salad delicious, the main ingredient Kale is packed with loads of antioxidants, vitamins and nutrients making this also amazingly healthy. The most important key to a good Kale salad is massaging the leaves with your hands in the dressing, this softens the leaves getting rid of any bitterness or toughness in the taste so make sure not to skip this step.
Peanut ButterThis peanut butter is very creamy and smooth and couldn't be any easier to make. Simply add roasted peanuts to a food processor and it's done in less than 5 minutes.
Sweet Potatoe & Rocket SaladBaked sweet potato salad with rosemary, flaked almonds, a sweet honey and mustardy dressing and cottage cheese. This salad is crunchy, bursting with flavour and full of healthy delicious ingredients. I find this tastes best served warm when the potatoes are just out of the oven.
HummusHomemade hummus is one of my favourite recipes. Amazingly versatile, can be served as a dip with tortilla chips, crunchy vegetables, or some warm flatbread, it can easily bring a dish together! This recipe is smooth, velvety rich, creamy and so easy to make. With just a few ingredients, you can make this in no less than 5 minutes!
Spinach & Sweet Potato Quiche

A healthy sweet potato and spinach quiche with a crisp spelt flour base and the addition of yoghurt instead of cream which adds a lighter and tasteful texture. The smoked paprika, thyme and garlic clove give a burst of slightly spicy flavour to this delicious guilt free quiche.

Dutch BabyThis giant fluffy dutch baby pancake is similar to a Yorkshire pudding and tastes as good as it looks. It's sure to impress and ideal for a delicious brunch. Very easy to put together, simply whisk all the ingredients in a large bowel then pour into a piping hot cast iron skillet and bake in the oven at 200C for around twenty minutes or so. Serve with fresh berries, lemon wedges, lots of maple syrup and dust with some powdered sugar .
Carrot CakeIf you're looking for a super moist carrot cake this recipe is for you. The texture is rich with a wonderfully spiced cinnamon and ground ginger flavour and topped with a delicious velvety and smooth cream cheese frosting. You can divide this cake mixture into two 8 inch cake tins or even three or a wide two 9 inch layer cake if you prefer.
Granola BarsDelicious and healthy oven baked granola bars with a crunchy outer surface and a soft, sweet and chewy inside with the maple syrup and peanut butter adding a delicious caramel texture. You can really adapt this to whatever ingredients you like; chocolate chips, walnuts and pecans also taste great added into this recipe.
Fluffy Pancakes with Almond MilkThese are the perfect pancakes, very fluffy with a hint of almond from the almond flour and some sweetness from the maple syrup. Make sure to whisk the egg white with an electric hand mixer so they form a fluffy peak, this keeps the batter airy and thick making your pancakes extra fluffy.
Spaghetti PuttanescaHere's a classic Italian recipe and so easy and quick to put together you just simply cook the onion, garlic cloves, some chilli flakes and anchovies all in a pan with peeled tomatoes for 20 minutes. Top with parmesan cheese, capers, olives and some parsley.
