Make sure to blind bake the crust before adding the filling so that the base stays crisp and dry. This tastes amazing straight out of the oven with a side of fresh salad.

And don’t skip the whisking step: beating the eggs and sugars with an electric mixer for at least 4 minutes is key to achieving a thin crackly top!

Blueberry Baked OatmealThis baked oatmeal makes for a delicious and healthy breakfast. The honey and banana give a lovely sweet taste and the blueberries add loads of juicy flavour. It might take a while to bake but you can make it the night before and simply heat it up in the morning. Best served with some natural yoghurt!

You can really use any type of potato but I find Rooster potatoes roast perfectly in goose fat. Make sure the goose fat is sizzling hot in the tray before adding in the potatoes to ensure extra crispiness.
Maple Glazed Carrots with whipped RicottaDeliciously tender and sweet glazed carrots roasted in butter, maple syrup and white wine vinegar and ground cinnamon over a blanket of whipped ricotta, feta cheese and lemon then topped with fresh thyme and a handful of crushed pistachios . Even if you're not a fan of carrots you will love this recipe. Make sure to make a big batch.
