You can really use any type of potato but I find Rooster potatoes roast perfectly in goose fat. Make sure the goose fat is sizzling hot in the tray before adding in the potatoes to ensure extra crispiness.
Maple Glazed Carrots with whipped RicottaDeliciously tender and sweet glazed carrots roasted in butter, maple syrup and white wine vinegar and ground cinnamon over a blanket of whipped ricotta, feta cheese and lemon then topped with fresh thyme and a handful of crushed pistachios . Even if you're not a fan of carrots you will love this recipe. Make sure to make a big batch.

Roasted Brussel SproutsBrussels Sprouts are one of those vegetables that although good for you just don't taste that great on their own which is why this recipe will completely change your mind about this little green vegetable. Roasted in balsamic vinegar, maple syrup and and olive oil and topped with freshly grated parmesan cheese, a handful of roasted pine nuts and some plump cranberries that have been soaked in water to ensure extra juiciness. This irresistible dish is crunchy and crispy with the edges of the sprouts slightly charred and gives a perfect balance of savoury and caramelised sweet flavour that is incredibly moreish and sure to go down amazingly well at your Christmas dinner!

Butternut Squash Soup

This is the perfect comforting autumn soup -simple, wholesome and full of flavour. It's one I make again and again.

With just a few healthy ingredients - butternut squash, potato, leek and carrot, ground cumin and cinnamon spices for extra flavour and an apple for sweetness, this soup comes together easily and tastes incredibly nourishing. The texture is rich and creamy with a subtle kick from the the chilli flakes adding just the right amount of warmth.

Kale Salad with Tahini DressingNot only is this salad delicious, the main ingredient Kale is packed with loads of antioxidants, vitamins and nutrients making this also amazingly healthy. The most important key to a good Kale salad is massaging the leaves with your hands in the dressing, this softens the leaves getting rid of any bitterness or toughness in the taste so make sure not to skip this step.
Peanut ButterThis peanut butter is very creamy and smooth and couldn't be any easier to make. Simply add roasted peanuts to a food processor and it's done in less than 5 minutes.
Sweet Potatoe & Rocket Salad

This autumnal salad brings together the rich warmth of roasted sweet potatoes with fragrant rosemary, the nutty crunch of toasted flaked almonds, and the sweetness of dried cranberries. Balanced with peppery rocket and creamy crumbled feta, it’s bursting with flavour, texture, and nourishing ingredients.
