1.50 kg potatoes, peeled & cut into 1" cubes 2 tsp salt (for cooking) ½ cup milk ⅓ cup heavy cream 4 tbsp butter 1 tbsp finely chopped chives for garnish 1 tsp butter to decorate

- Place the potato cubes in a large pot , pour in water to cover with 2 tsp salt. Bring to a boil then simmer for about 13-15 minutes or until fork tender.
- Drain the potatoes well then place into a large bowl. Add in the milk, cream and butter and mash together using a hand held masher, until the texture is completely smooth.
- Transfer to a serving dish and top with a cob of butter and some freshly chopped chives.
