Easy creamy potato puree with just a few simple ingredients yet full of flavour. This recipe is smooth and velvety with heaps of butter and fresh milk and cream stirred in.
1.50kgpotatoes, peeled & cut into 1" cubes
2tspsalt (for cooking)
½cup milk
⅓cup heavy cream
4tbsp butter
1tbspfinely chopped chives for garnish
1tspbutter to decorate

Place the potato cubes in a large pot , pour in water to cover with 2 tsp salt. Bring to a boil then simmer for about 13-15 minutes or until fork tender.
Drain the potatoes well then place into a large bowl. Add in the milk, cream and butter and mash together using a hand held masher, until the texture is completely smooth.
Transfer to a serving dish and top with a cob of butter and some freshly chopped chives.
