Homemade mulled wine is such a delicious festive drink, ready in just 30 minutes and fills your house with warming seasonal spices. I love to make mulled wine using my classic recipe and sometimes add into the pot some rosemary, cranberries or extra cinnamon sticks for serving.

 1 (750ml) bottle of dry red wine
 2 large oranges
 8 whole cloves
 3 cinnamon sticks
 2 star anise
 2 inch ginger, peeled & chopped into quarters
 3 -4 tbsp honey
  cup port or brandy

1. Use a peeler to remove the rinds from one orange then juice the orange and slice the other orange into rounds and reserve for garnish. 

2. In a saucepan over medium heat place place the orange rinds, orange juice, sliced orange rounds  and all the other ingredients. Stir over medium heat until the honey is dissolved then turn the heat up to a simmer but do not boil. Simmer gently for 30-35  minutes.

3. Strain the mixture and ladle into cup whilst still hot. Garnish with more orange slices, cinnamon sticks and rosemary sprigs.
