Chai Cookies

As soon as the leaves turn yellow and the days become colder, I find myself craving the comfort of baking these chai cookies.

Soft and chewy with a sugar-crackled edge, they’re spiced with ground cinnamon, ginger, cardamom, and clove. A light glaze made from real brewed chai tea drips over the tops, setting into a glossy finish that makes them as beautiful as they are satisfying.

Mulled Wine

Homemade mulled wine is such a delicious festive drink, ready in just 30 minutes and fills your house with warming seasonal spices. I love to make mulled wine using my classic recipe and sometimes add into the pot some rosemary, cranberries or extra cinnamon sticks for serving.

Cinnamon Rolls

These cinnamon rolls are a  delicious soft and fluffy taste of haven with a rich caramel like sauce combination of  butter,  dark brown sugar and cinnamon filling and topped with a heavenly butter and cream cheese frosting. These rolls are easy  enough to make and bake in the oven in just 25 minutes. ! 

Rum & raisin ice creamThis old fashioned rum and raisin ice cream does take a while to make but is certainly worth the effort. The raisins are best left overnight in a third a cup of dark rum to plump up fully and absorb all the rum. You can use any kind of rum your have handy, I have made this recipe both with dark rum and golden rum and the results are both great. If you really like raisin and rum you can ajdust the recipe to 1/2 a cup of raisins and 1/2 a cup rum, I prefer just a third a cup as it becomes a bit too raisiny for me.
Blueberry buttermilk muffinsIf you don't want to see your left over buttermilk go to waste then this blueberry muffin recipe is the perfect recipe.
Chocolate chip cookiesIncredibly easy chocolate chip cookie recipe that is amazingly chewy, a bit fluffy, perfectly buttery and sweet and of course very chocolaty. Make sure your butter is softened to room temperature , an easy trick if your butter is too cold is to microwave the butter for 40-60 seconds on defrost mode to soften. These cookies taste best cooled down yet still slightly warm.
Mint Ice CreamHomemade mint ice cream made with fresh mint leaves steeped in milk, freshly whipped cream, honey and dark chocolate shavings. The texture is incredibly creamy and rich with a mild minty flavour, very moreish and melts in your mouth. A dessert that not only tastes much better than the store brought version, but is also healthier and sure to impress.
