Strawberry ice cream with strawberry sauce

Homemade creamy strawberry ice cream with an incredibly delicious rich homemade strawberry sauce. This ice cream is so easy to make with just a few simple ingredients, simply infuse the strawberries in sugar to release the juices then add all to an ice cream machine! If you don't have an ice cream machine you can simply whip the cream then combine the ingredients together and transfer to an airtight container then leave to harden in the freezer for 6 hours or overnight.

 2 cups strawberries, stems removed and diced
 ½ cup sugar
 1 tsp lemon juice
 1 tsp vanilla extract
 3 tbsp honey
 1 and 1/2 cup cream
 1 cup milk
 1 pinch of salt
For the strawberry sauce
 1 cup strawberries, stems removed and chopped
 4 tbsp sugar

1. Place the diced strawberries, sugar, honey and lemon juice in a medium sized bowl. Leave to sit for 20-30 minutes or until the strawberries have released their juices.

2. In a large bowl place the cream, milk, vanilla extract and salt. Set aside.

3. After the strawberries have been left to sit, use a hand held masher to press down on them to break down the larger strawberries, it's ok if there are some clumps of strawberries left. Pour the strawberry mixture into the cream mixture and combine together.

3. Place the ice cream mixture into your prepared ice cream maker. Use according to the manufactures instructions (mine takes no more than 15-20 minutes to turn into ice cream).

4. Meanwhile make your strawberry sauce. Use a food processor or hand held electric whisk to puree the chopped strawberries. Place the purred strawberries in a saucepan over medium heat. Add in the sugar and cook for 5-10 minutes or until the sugar has dissolved and the sauce has thickened. Remove from the heat and set aside to cool

5. Serve your ice cream with the strawberry sauce and some freshly chopped strawberries. You can also store the ice cream in an air tight container and place in the freezer to harden.
