This simple sautéed cabbage is full of flavour and so easy to make yet delicious and good for you too! Simply blanch the chopped cabbage in boiling water then sauté it with onion in butter and rosemary until softened and caramelised, this works well as a side dish that's very easy to make and adds heaps of flavour to any dish.

1. Place the sliced cabbage in a large saucepan and cover with water. Bring to a boil for 5-6 minutes then remove from heat and strain.
2. Meanwhile in a cast iron skillet melt the butter over medium heat and place the rosemary sprig in the skillet. Add in the chopped onion and fry until beginning to brown, about 5 minutes or so. Add the cabbage in parts to the skillet and sauté for 15-20 minutes until softened and caramelised.
3. Season with plenty of salt & pepper and serve.
