Red Cabbage & Apple salad

 Crunchy grated red cabbage, carrot and apple salad topped with some chopped pecans and fresh coriander that comes together with a zingy mustardy, apple cider vinegar and olive oil dressing. This is a salad I find myself making often as it goes so well with a lot of dishes, is wonderfully colourful and healthy and so versatile; I sometimes add in pumpkin seeds, walnuts, bell peppers, celery or other similar crunchy nuts or vegetables I have ready to use up in my kitchen. 

 ½ head red cabbage, grated
 2 large carrots, grated
 2 apples, thinly sliced
 ¼ cup pecans, chopped
 3 tbsp coriander, chopped
For the vinaigrette
 3 tbsp olive oil
 3 tbsp Apple cider vinegar
 1 heaped tbsp Mustard
 1 tbsp honey
 large pinch of ground cinnamon
 salt & pepper

1. Simply combine all the ingredients in a bowl and mix together. Top with extra pecans and coriander. In a small bowl whisk all dressing ingredients together then drizzle over the salad.
