Pizza dough

This is the easiest and best pizza dough recipe that comes together with just 10 minutes of kneading. The inside is incredibly fluffy and chewy with crisp crunchy edges. Make sure to use one part 00 flour which you should be able to find easily in any Italian store, this flour is the secret to getting the perfect pizza base so try not to substitute it for regular flour.

 1 tsp yeast
 1 tsp sugar
 1 tbsp olive oil
 1 cup warm water
 1 cup flour (150g) 00 flour
 1 cup plain flour
 1 tsp salt
  cup flour for kneading
 extra olive oil for the pizza edges and for hands when kneading

1. In a bowel whisk together the sugar, lukewarm water and yeast. Leave for 10 minutes for the yeast to activate (it should become forty and bubbly) then gently mix in the olive oil.

2. In a large bowl combine the flour and salt. Mix in the yeast mixture very slowly whilst bringing everything together with a spoon.

3. Put some flour on a flat surface and drizzle your fingers and hands with a good bit of olive oil (to stop the dough sticking to them). Put the dough onto the flat floured surface and knead for about 10-15 minutes adding flour as you go. Place the dough in a large bowl with some olive oil on the bottom, cover with a hot wet towel and place in a warm area, preferably near a radiator to raise, at least 2-3 hours. In the meantime turn one baking sheet upside down and place on the highest rack in the oven. Preheat the oven to 250C for at least 30-45 minutes.

4. Carefully remove the dough from the bowl and place on a floured surface. Place more flour on top of the dough and then divide into two parts. Roll out the pizza bases to form a small circle shape by using your fingers and leaving a border at the edges. Lift the dough up and using quick circular movements pull from hand to hand to stretch out to form a round shape, take care to keep the borders in place.

5. Place the pizza bases on a baking sheet and coat the borders with a little olive oil. Place the pizza sauce on top of the pizza. Using oven mitts quickly take the baking sheet out of the oven,( taking care not to leave the oven door open long). Drizzle a little flour on the sheets and place the pizzas on top (the baking sheet must still be upside down) , put the baking sheet back in the oven on the middle rack. Bake the pizza bases in the oven for just 10 minutes

6. Remove the pizzas from the oven again then add your pizza toppings of choice and drizzle with 1-2 tsp olive oil. Cook with toppings still at 250C for 6 minutes more. Top with some fresh basil and enjoy.
