Guinness Soda Loaf

Here's a sweet, salty and malty Irish soda bread recipe that requires absolutely no kneading and no yeast needed so no waiting on the dough to rise. This is my granny's recipe and one I know by heart. I love to slatter this soda bread with my homemade butter and heaps of sweet strawberry jam!

 

Yields1 Serving

 250 g (1 cup) wholemeal flour
 200 g (1.6 cup) plain flour
 100 g (1 cup) oats
 ¾ tsp salt
 1.50 tsp bread soda
 2 tbsp pumpkin seeds
 2 tbsp sunflower seeds
 300 ml (1/2 cup )Guinness
 200 ml (.8 cup)buttermilk
 2 tbsp black treacle
 a few extra sunflower seeds, pumpkin seeds & oats to top

1. Preheat the oven to 350F (180c) and grease a 9X5 inch loaf tin. In a large bowl place the wholemeal flour, plain flour, salt, soda, pumpkin and sunflower seeds and mix together.

2. In another bowl pour in the Guinness, buttermilk and black treacle, whisk together well so the treacle is well mixed in. Add the wet ingredients into the dry and gently combine all together.

3. Pour the mixture into the loaf tin and bake in the oven for 55-60 minutes or until the top of the bread has turned a lovely dark golden brown and a toothpick inserted into the centre comes out clean. Once done remove from the oven and leave to cool on a wire rack.
