Delicious and healthy oven baked granola bars with a crunchy outer surface and a soft, sweet and chewy inside with the maple syrup and peanut butter adding a delicious caramel texture. You can really adapt this to whatever ingredients you like; chocolate chips, walnuts and pecans also taste great added into this recipe.

1. Preheat the oven to 175C and grease an 8 inch tray. Heat the coconut oil in a small saucepan over medium heat. Add in the maple syrup, peanut butter and vanilla extract and salt. Cook on low heat for about 5 minutes, stirring regularly. Remove from the heat and set aside.
2. In a large bowl combine the oats, pumpkin seeds, cranberries, flaked almonds and cinnamon.
3. Pour the wet mixture into the dry ingredients and use a wooden spoon to combine all together. Transfer to the greased tin and press the mixture down firmly.
4. Bake in the oven for 12-15 minutes or until the top has turned golden brown. Wait until the bars have cooled (about an hour) before cutting into into 12 even bars.
