Fennel Soup

Fennel and celery soup that tastes similar to a simple potato soup yet is amazingly healthy and nutritious. Fennel has a high amount of vitamin C and a magical mineral called manganese which is great for immune health, tissue repair, and even building collagen. The addition of grated ginger, fresh thyme, garlic clove and ground cumin add to this soups rich, hearty and comforting flavour. Best served with fennel fonds, crusty bread and parmesan cheese.

 2 tbsp olive oil
 2 large fennel bulbs, trimmed and diced
 2 large celery stalks, sliced
 1 medium potato, peeled and diced
 1 inch ginger, grated
 2 garlic clove, finely chopped
 2 tsp fresh thyme
 1 tsp ground cumin
 600 ml chicken stock
 sa.lt & pepper to taste
 fennel fonds for garnish
 2 tbsp parmesan cheese to garnish
