Carrot Salad

Healthy and delicious carrot salad with pumpkin seeds, flaked almonds, raisins, fresh parsley and a zingy mouth watering dressing. This salad is bursting with flavour and so easy to make. Other ingredients that go well with this recipe are cranberries, walnuts, pecans and fresh herbs like thyme and rosemary. I find this tastes best when left in the fridge a few hours to marinate.

Carrot Salad
 4 large carrots
 2 tbsp raisins
 2 tbsp pumpkin seeds
 2 tbsp fresh parsley, chopped
 2 tbsp flaked almonds
Dressing
 2 tbsp olive oil honey
 2 tsp honey
 1 tbsp apple cider vinegar
 salt & pepper
 1 tsp grated ginger
 1 tsp mustard
 pinch of cinnamon

1. Peel and shred the carrots and place in a large bowl.

2. Add in the raisins, pumpkin seeds, parsley and flaked almonds, toss together.

3. In a small bowl whisk together the olive oil, honey, apple cider vinegar, mustard, grated ginger, cinnamon and salt and pepper.

4. Pour the dressing over the salad and mix well.
