Boxty (Irish Potato Pancakes)

Boxty is a traditional Irish potato pancake recipe that goes back as for as 1700. This simple recipe is a a combination of mashed and grated potatoes, buttermilk, grated cheddar cheese and plenty of chopped scallions.

These pancakes are so hearty and easy to whip up, typically fried in a pan with heaps of butter until the outside is very crispy and the inside fluffy and tender.

Usually eaten at breakfast, you can serve Boxty with sour cream and salmon or they also go very well with some bacon and eggs.

 1 & 1/3 cup flour
 ¾ tsp salt
 ¾ tsp baking soda
 1 cup mashed potatoes
 1 cup grated potatoes
 1 cup buttermilk
 3 spring onions, finely chopped
 56 g cheddar cheese, grated
 butter for pan
 sour cream to serve

1. In a larege bowl add the flour and salt and baking soda and combine. Mix in the mashed and the grated potatoes and then pour in the buttermilk little by little until whilst stirring fully incorporated. Add in the scallions and cheddar cheese and combine all.

2. Heat some butter in a large pan over medium heat. Once the pan is hot wnougha nd the butter sizzling, add 1-2 tbsp of the Boxty mixture into the pan and press down to form a circle shape. Add another two three pancakes to the pan if there's enough room in the pan. Fry the pancakes about 4-5 minutes on one side then flip and fry another 4 minutes on the opposite side.

3. Set the pancakes aside on a plate lined with kitchen paper and repeat the process with the rest of the mixture. Serve slightly warm with some sour cream or some eggs and bacon for a hearty breakfast.
