Amaranth porridge with caramelised pears

Creamy, hearty and nutrient dense Amaranth porridge with soft caramelised pears fried in coconut oil, maple syrup, a pinch of ground cloves and topped with some nutty crushed walnuts. Amaranth is a great source of protein, magnesium and iron so not only a delicious but also an incredibly healthy way to start your day.

 1 cup Amaranth
 1.50 milk
 1.50 water
 2 tbsp maple syrup
 1 tsp cinnamon
 pinch of salt
For the Caramelised P ears
 2 large pears, sliced
 1 tbsp coconut oil
 1 tbsp maple syrup
 large pinch of cloves
 handful of walnuts

1. Place the Amaranth, milk and water in a large pot and bring to a boil. Turn down the heat to low and stir in the maple syrup salt and cinnamon, cover and let simmer for at least 25 minutes. Once done stir and leave to stand a further 5 minutes.

2. Meanwhile place the coconut oil in a pan over medium heat, add in ground cloves and coat the pan evenly with the oil. Place the pear slices in the pan and drizzle the maple syrup over the pears. Fry for 10 minutes on either side until softened and golden brown.

3. Divide the Amaranth into bowls then place the pears over and top with some crushed walnuts.
