Fresh homemade pesto sauce bursting with heaps of herby, nutty, cheese and garlic flavour! This incredibly versatile sauce is one of my favourites , it can be added to a variety of dishes such as pasta, pizza, salads.... and thankfully couldn't be any easier to make. Simply add a bunch of fresh basil leaves, some pine nuts, olive oil, salt and grated parmesan to a food processor and pulse for a minute or two and you have this glorious green sauce that tastes good on almost everything!

 

 4 cups (80g) basil leaves
 2 large garlic cloves
 2 tbsp (20g) pine nuts
 ½ cup (45g) parmesan, finely grated
 ½ cup (125ml) olive oil
 ½ tsp salt
 2 tsp lemon juice

Simply add all the ingredients to a food processor and pulse for 1-2 minutes or until smooth then transfer to a glass jar. This pesto should stay fresh in the refrigerator for up to 3-4 days.
