Homemade granola with toasted pecans, oats, pumpkin seeds, raisins and cranberries and cinnamon spice all baked with naturally sweet and nutty flavoured coconut oil and maple syrup. This delicious and healthy breakfast only takes 20 minutes or so in the oven. You won't ever want to buy granola again after trying this recipe!

 2 cups oats
 ½ cup pecans
 2 tbsp cup pumkin seeds
 ½ tsp salt
 1 tsp cinnamon
 ¼ cup coconut oil, melted
 ¼ cup maple syrup
 ½ tsp vanilla extract
  cup cranberries & raisins mix

1. Preheat the oven to 180C and line a large baking tray with parchment paper.

2. In a large mixing bowl place the oats, pecans, pumpkin seeds, cinnamon and salt. Combine together.

3. Pour in the coconut oil, maple syrup and vanilla extract and mix well together. Place the granola into the baking tray and press down firmly with a spoon. Bake in the oven for 20-25 minutes or until golden brown.

4. Once done remove the tray from the oven and add in the cranberries and raisins.Leave to cool completely before serving (about 45 minutes). This granola can be stored at room temperature in a air glass container for up to 10 days.
