Shaved Fennel Salad with finely sliced apple and celery, crushed walnuts, fresh dill, crumbled feta cheese and a delicious tangy lemon vinaigrette. This is the perfect side salad that can be made in less than ten minutes, wonderfully crunchy, tasty and incredibly healthy.

Prep Time10 mins

 3 tbsp lemon juice
 3 tbsp olive oil
 ½ tsp salt
 2 fennel bulbs, shaved or finely sliced
 2 celery stalks, finely chopped
 1 green apple, cored & finely sliced
 80 g feta, crumbled
  cup walnuts, crushed
 1 tbsp Dill, chopped
 zest of one lemon
 freshly ground black pepper

1) In a small bowl whisk together the lemon juice, olive oil and salt. Taste a d add more lemon juice if necessary.

2. In a large bowl place the sliced fennel, celery and apple slices. Pour the lemon vinaigrette over the salad and toss together.

3. Place the crumbled feta and crushed walnuts on top, freshly chopped Dill and lemon zest, lastly sprinkle the ground pepper over and serve.
