A delicious Amish style baked oatmeal with apple , ground cinnamon, cloves raisins and walnut oatmeal that works as a mouth watering breakfast or simply as a tasty dessert. The secret to this apple oatmeal is simmering the apples in a pot with a little water before placing in the oven ensuring they become incredibly sweet and soft ; a step that is not to be skipped! This baked oatmeal recipe is so easy to put together, you can make it in advance the night before too and tastes great heated up in the morning.

 2 large apples, cored and chopped into 1/2 inch cubes (Pink Lady, Gala, Bramley's, Granny Smith...)
 2-3 tbsp water
 1.50 cups oats
 ½ cup raisins
 ½ cup walnuts, crushed
 2 tsp ground cinnamon
 1 large pinch of ground cloves
 1 tsp baking powder
 2 large eggs
 1.50 cups whole milk
 1 tsp vanilla extract
 ½ cup maple syrup
 4 tbsp unsalted butter, melted
 2 tbsp dark brown sugar
  tsp salt

1. Preheat the oven to 180C and grease a large baking tin with olive oil. In a large saucepan place the chopped apples and 2 tbsp of water, simmer for 10-12 minutes or until the apples are just softened.Set aside

2. In a large bowl mix together the oats, raisins, crushed walnuts, cinnamon, cloves and baking soda. In a separate bowl whisk together the two eggs then pour in the milk, maple syrup, vanilla extract and unsalted butter. Lastly whisk in the dark brown sugar and salt.

3. Mix the dry ingredients into the wet ingredients then gently fold in the chopped apples. Pour the mixture into your baking tray and bake in the oven for around 35-45 minutes or until the oatmeal is set and top has turned golden brown. Allow to cool slightly for 10 minutes or so before serving.
