Chocolate Brownies with coconut oil

Easy and uncomplicated chocolate brownie recipe with a healthy mix of ingredients.You don't need any cooking chocolate, cocoa powder will do! The coconut oil, maple syrup, cocoa powder and spelt flour and chocolate chips combine perfectly together and result in a crusty brownie top with an extra fudgy very chocolaty and moist filling.

 ½ cup coconut oil, melted
 ¾ cup maple syrup
 3 eggs
 1 tsp vanilla extract
 ¾ cup white spelt flour
 ¾ cup cocoa powder
 ½ cup chocolate chips
  cup crushed hazelnuts (optional)

1. Preheat the oven to 180C and line an 8 inch baking tin with parchment paper.

2. In a large bowl place the melted coconut oil, maple syrup and vanilla extract, mix to combine.

3. In a separate small bowl lightly whisk the eggs with a fork and then add to the coconut oil mix and combine.

4. In a separate large bowl place the spelt flour and cocoa powder and mix together. Pour the wet ingredients into the dry and combine. Lastly fold in the chocolate chips.

5. Pour the mixture into the baking tin and bake for 30 minutes or until just done (any longer will dry out the brownies). Leave to cool slightly before removing from the tin and cut into 12 equal brownie pieces.
