Raisin & Pine Nut Couscous

This uncomplicated couscous salad is so easy to make yet incredibly versatile and works well as an addition to any meal. Full of various textures and spices with the ground cinnamon and cumin, fresh mint and parsley adding heaps of flavour and the raisins giving some subtle sweetness all balanced out by the pine nuts, crumbled feta cheese and lime juice adding a nutty, smoky and zesty flavoursome touch. Best served warm and drizzled with a tablespoon of olive oil!

 200 g couscous
 ¼ cup raisins
 ¾ tsp salt
 1 tsp ground cumin
 ¼ tsp cinnamon
 ½ cup kalamato olives, cut into thirds
 ¼ cup pine nuts
 juice of 1/2 lime
 3 tbsp olive oil
 115 g feta, crumbled
 3 bunches of fresh parsley
 3 bunches of fresh mint
 freshly ground black pepper

1. Place the couscous, raisins and salt in a large bowl and cover with boiling water. Leave for 15 minutes or according to the packets instructions.

2. Once ready, fluff the couscous with a fork. Add the cumin, cinnamon, pine nuts and olives to the bowl and combine together. Squeeze the lime juice over the couscous.

3. Add in the mint and parsley, feta cheese and drizzle over the olive oil. Mix all ingredients together and finish with a sprinkle of some ground pepper.
