200 g couscous ¼ cup raisins ¾ tsp salt 1 tsp ground cumin ¼ tsp cinnamon ½ cup kalamato olives, cut into thirds ¼ cup pine nuts juice of 1/2 lime 3 tbsp olive oil 115 g feta, crumbled 3 bunches of fresh parsley 3 bunches of fresh mint freshly ground black pepper
11. Place the couscous, raisins and salt in a large bowl and cover with boiling water. Leave for 15 minutes or according to the packets instructions.
2. Once ready, fluff the couscous with a fork. Add the cumin, cinnamon, pine nuts and olives to the bowl and combine together. Squeeze the lime juice over the couscous.
3. Add in the mint and parsley, feta cheese and drizzle over the olive oil. Mix all ingredients together and finish with a sprinkle of some ground pepper.
