125 g butter 1 large onion, chopped 2 garlic cloves, crushed 3 sprigs of thyme 1 tbsp sage 1 tbsp rosemary 300 g sausage meat 1 large apples peeled & finely chopped 300 g breadcrumbs 100 g cranberries
11.Place the cranberries in a small bowl, cover with warm water to soften and set aside. Melt the butter in a large saucepan over medium heat. Add in the onion and herbs. Cook for 5 minutes until the onion starts to caramelise then add in crushed garlic.
2. Add the sausage meat to the pan making sure to break it apart into small chunks with a spoon so as it does not stick together. Cook on low heat for just 10- 12 minutes until the sausage is almost but not fully cooked. Add in the chopped apple and breadcrumbs and stir all together so that the butter coats all the breadcrumbs. Lastly add in the cranberries and mix all ingredients together.

You can now stuff a turkey or chicken with this stuffing and simply cook in the oven otherwise if making separately : transfer to a baking dish and cook in a preheated oven at 180C for just 25 minutes with a cover of tinfoil then remove the tinfoil and cook a further 15 minutes until the top is golden brown.
